Ingredients

  • 200 grams strawberry approx. 5-6 strawberries, fresh
  • ½ cup dates packed, pitted
  • 1 cup rolled oats gluten-free if preferred
  • 1 cup almonds blanched
  • 2-3 tablsepoons coconut optional, for rolling, unsweetened, shredded

Instructions

  1. Wash and dry your strawberries, and remove the stems. Then line a baking sheet with parchment paper and set it aside.
  2. Then add everything except the coconut to a food processor. Process until combined, scraping down the sides as needed. If the mixture feels too wet to roll into balls, add another 1-3 tablespoons of oats and re-process.
  3. Use a one-tablespoon cookie scoop to scoop the strawberry mixture and roll it into a ball. Place it on your baking sheet and repeat with the remaining mixture. You should get approx. 26 balls.
  4. OPTIONAL: Roll some or all of the balls in shredded coconut and return to the tray.
  5. Refrigerate the balls for 1 hour (or longer) and enjoy.

Notes

  • The juiciness of your strawberries will determine if more oats are required

  • Store your strawberry bliss balls in the fridge for 3-4 days or the freezer for up to 3 months.
  • Wash and DRY the strawberries before processing to prevent excess moisture in the mixture. If your batter is too wet, it will be harder to roll into balls. If this happens, add another 1-3 tablespoons of oats as needed.
  • The juiciness of your strawberries will determine if more oats are required. Start with 1 cup, and you may always add if needed.
  • The batter will be sticky so use damp hands to roll the mixture into balls to prevent it from sticking to your hands.
  • The bliss balls will be soft, so refrigerate them for at least 1 hour before enjoying them to help them harden and set.
