Strawberry Chicken

Indulge in this irresistible Strawberry Chicken recipe made in 30 minutes time. This summertime dinner of grilled chicken topped with a refreshing strawberry mozzarella bruschetta and drizzled with a luscious balsamic glaze, creating a tantalizing fusion of flavors that will leave you craving for more.

Ingredients

  • 4 skinless boneless chicken breast
  • 2 tablespoon olive oil divided
  • 1 tablespoon McCormick Garlic & Herb Seasoning
  • 1 pint strawberries stems removed and diced
  • ½ cup fresh mozzarella cheese diced
  • ¼ cup fresh basil leaves chiffonade
  • balsamic glaze for topping

Instructions

  1. Preheat the grill on high heat.
  2. While the grill heats, rinse and pat dry the chicken breast. Drizzle with 1 tablespoon olive oil on top and season with McCormick Garlic & Herb Seasoning. Set to the side.
  3. Rinse, slice stems, and dice strawberries. Place in a bowl. Then add dice the fresh mozzarella cheese and chiffonade the basil leaves. Drizzle 1 tablespoon olive oil on top and mix well. Place in the refrigerator until ready to eat.
  4. Reduce the heat on the grill to low; grill chicken for 15 minutes, turning once until internal temperature reaches 165 degrees Fahrenheit. Remove from the grill and let rest for a few minutes.
  5. Place chicken on a platter. Top with strawberry mozzarella topping and drizzle balsamic glaze over strawberries and chicken. Enjoy immediately.

Notes

  • Ensure even cooking - To ensure that the chicken cooks evenly, make sure the chicken breasts are of similar thickness. If needed, pound the thicker parts of the chicken breasts to create a more uniform thickness.
  • Let it rest - Once the chicken is grilled, allow it to rest for a few minutes before slicing it. This resting period allows the juices to redistribute, resulting in juicier and more tender chicken.
  • Fruit - Any berries (raspberries, blueberries, and even blackberries) would work well here. Whatever is in season and looks delicious. I have even used diced fresh peaches or mango to make the fruit bruschetta topping.
  • Experiment with toppings - While the strawberry topping is delicious as it is, feel free to experiment with additional ingredients. You can add a sprinkle of feta cheese, toasted nuts, or a drizzle of honey to take the dish to another level of flavor complexity.
  • Double the recipe - If you're hosting a gathering or want to have leftovers, consider doubling the recipe. Grilled balsamic chicken with strawberries makes for excellent leftovers and can be enjoyed cold in sandwiches, wraps, or even on top of a bed of salad greens.
