Description

The dessert features a large meringue nest or individual meringue shells filled with heavy whipping cream whipped to stiff peaks without added sugar, relying on the sweet components of the meringue and glaze. Fresh, halved strawberries are arranged carefully within the cream, placing the larger berries in the center for a visually appealing presentation.

A commercially prepared strawberry glaze is brushed over the berries to add shine and a sweet finish reminiscent of traditional Scottish desserts. This glaze avoids artificial ingredients and adds flavor without extra sweetness from the cream or meringue. The dessert should be kept refrigerated and is best served soon after assembly to maintain the crispness of the meringue.

Premade meringue shells can be used to simplify preparation, eliminating the need to make meringue or use cream of tartar. The combination of these components provides a balanced light dessert suitable for spring or summer occasions.

  • 1 large meringue or 8 individual nests, see recipe card below, nest form
  • 12 oz heavy whipping cream
  • 1 lb strawberries fresh, organic
  • 7 oz strawberry glaze ½ tub, brand Marie's

Instructions

Prepare the Strawberries:

  1. Wash and remove the stems from the strawberries.
  2. Dry with paper towel and set aside.

Whip the Cream:

  1. Whip the cream until stiff, but don’t over whip or you’ll end up with butter.
  2. DO NOT BE TEMPTED TO ADD ANY SUGAR, not even a ¼ of a teaspoon. Trust me on this. There is plenty of sugar in meringue and glaze.

Assemble the Strawberry Dessert:

  1. Place the large meringue nest on a serving plate (tip: you may want to put a dollop of cream underneath to keep the dessert from sliding off the plate). 
  2. Fill the nest with the whipped cream.
  3. Next, add the strawberries as close together as possible. 
  4. Put the largest strawberries in the center, and put the smaller ones closer to the perimeter.
  5. Finally, cover the strawberries with the glaze.
  6. If you aren’t serving it immediately, keep it refrigerated, but I wouldn’t advise more than 24 hours as it really is best when served right away.

Notes

  • Premade meringue shells can be used to simplify the dessert assembly.
  • Do not add sugar to the whipped cream because the meringue and glaze provide enough sweetness.
  • Use Marie's strawberry glaze for a natural, corn syrup-free finish that tastes like traditional Scottish desserts.
  • Serve the dessert shortly after assembly or refrigerate for up to 24 hours to preserve the meringue's texture.
