Description
The Strawberry Fool recipe blends fresh quartered strawberries mashed with lemon juice and a small amount of black pepper to add a subtle spice. The berries are optionally marinated for about an hour to enhance their flavor and soften their texture. Separately, heavy cream with at least 30% fat is whipped with powdered sugar and vanilla extract until stiff peaks form, creating a dense, airy cream component.
Layering the strawberries and whipped cream in serving glasses creates a dish with contrasting textures — the slightly chunky, sweet-tart strawberry mash against fluffy, sweetened cream. This dessert is served cold, providing a refreshing and lightly sweet finish to any meal.

Ingredients
Strawberry Mash
- 3 cups strawberries cleaned
- ⅛ cup lemon juice
- ⅛ Teaspoon black pepper ground
Whipping Cream
- 16 Tablespoon heavy cream
- 3 Tablespoon powdered sugar
- few drops vanilla extract
Garnish
- trawberry fresh
- Mint Leaves fresh
Instructions
- Rinse your strawberries and cut off bad parts if any. Remove green crown.
- Cut strawberries into quarters.
- Place strawberries into a mixing bowl and add lemon juice and black pepper.
- With a fork, mash the strawberries to the desired smoothness. It can be a bit chunky too.
- Keep strawberries to marinate. I keep them for 1 hour, but you can use them directly too. It just tastes better marinated.
- Prepare whipped cream. Place whipping cream, sugar, and a few drops of vanilla extract into a mixing bowl.
- With a hand mixer or whisk, whisk your whipping cream to a stiff whipped cream.*see Notes
- Place some mashed strawberry into a serving glass or bowl. Layer with the whipped cream and repeat the process again. Finish with a layer of cream and some strawberry poured over it.
- Garnish with a fresh strawberry and/or a fresh mint leave.
- Serve up still cold, instantly.

- Use well-chilled heavy cream and a cold bowl to help achieve stiff peaks when whipping.
- Choose heavy cream with at least 30% fat content; consider a stabilizer to keep whipped cream firm longer.
- Marinating the strawberry mash for about an hour improves flavor but can be skipped for quicker serving.
