Stuffed Dates Recipe (4 Ways)
Description
The Stuffed Dates Recipe offers four distinctive fillings, each enhancing the inherent sweetness and chewiness of Medjool dates. One option pairs creamy goat cheese with ground pistachios and honey drizzle, providing a blend of tangy, nutty, and sweet flavors. Another combines the saltiness of feta cheese with walnut pieces for contrasting texture and depth. The nut butter and semisweet chocolate chip filling adds creamy richness and sweetness, while the mixed nuts topped with desiccated coconut contribute crunch and a subtle tropical note.
Preparation involves carefully slicing dates to remove seeds while keeping the fruit intact for easy filling. Serving options include cold, room temperature, or gently warmed in the oven to enhance flavors and soften the dates further. The recipe allows for versatility depending on taste preference and occasion, offering an assortment of sweet and savory bites.
For storage, freezing is recommended by first placing stuffed dates on a parchment-lined tray, freezing solid, then transferring them into a freezer bag for up to six months. When ready to serve, thaw in the refrigerator overnight or warm in the oven until heated through. These dates can be a convenient make-ahead snack or party offering.
Ingredients
- 24 Medjool dates
- 4 oz goat cheese
- 2 tbsp pistachio ground
- 3 tbsp honey
- 4 oz feta cheese
- 1/3 cup walnuts
- 3 tbsp nut butter
- 1/4 cup semisweet chocolate chips
- 1 cup mixed nuts almonds, pistachios, cashews and walnuts
- 1 tbsp desiccated coconut
Instructions
- Slice open each date and take out the seed. Make sure not to cut the dates all the way through and have them intact on one side.
- For goat cheese honey: Fill the dates with goat cheese and dip in the ground pistachios. Then drizzle some honey on top.
- For feta and walnut: Stuff the dates with a chunk of feta and top with a piece of walnut.
- For nut butter chocolate: Fill the dates with the nut butter and top with a few chocolate chips.
- Nuts and coconut: Stuff the dates with a few nuts and top with desiccated coconut.
Notes
- Medjool dates are preferred due to their softness, size, and chewiness, which complement fillings well.
- Serve stuffed dates cold, at room temperature, or warmed in a 350°F oven for 5 minutes for a softer texture.
- To freeze, first place stuffed dates on a parchment-lined baking sheet and freeze for one hour, then transfer to a freezer bag for up to six months.
- Thaw frozen stuffed dates in the fridge overnight or warm in the oven at 350°F for 15-20 minutes before serving.
