Stuffed Dates Recipe (4 Ways)

This recipe presents four ways to stuff Medjool dates, known for their soft, chewy texture and large size. Fillings include goat cheese with pistachios and honey, feta with walnuts, nut butter with chocolate chips, and mixed nuts with desiccated coconut. These variations create sweet, salty, crunchy, and creamy combinations that highlight the natural sweetness of the dates, making them suitable as snacks or appetizers served cold or warm.

Description

The Stuffed Dates Recipe offers four distinctive fillings, each enhancing the inherent sweetness and chewiness of Medjool dates. One option pairs creamy goat cheese with ground pistachios and honey drizzle, providing a blend of tangy, nutty, and sweet flavors. Another combines the saltiness of feta cheese with walnut pieces for contrasting texture and depth. The nut butter and semisweet chocolate chip filling adds creamy richness and sweetness, while the mixed nuts topped with desiccated coconut contribute crunch and a subtle tropical note.

Preparation involves carefully slicing dates to remove seeds while keeping the fruit intact for easy filling. Serving options include cold, room temperature, or gently warmed in the oven to enhance flavors and soften the dates further. The recipe allows for versatility depending on taste preference and occasion, offering an assortment of sweet and savory bites.

For storage, freezing is recommended by first placing stuffed dates on a parchment-lined tray, freezing solid, then transferring them into a freezer bag for up to six months. When ready to serve, thaw in the refrigerator overnight or warm in the oven until heated through. These dates can be a convenient make-ahead snack or party offering.
