Sugar Free Keto Marzipan

Sugar Free Keto Marzipan is a low-carb confection made from almond flour, almond and vanilla extracts, and a powdered sweetener, optionally bound with beaten egg or water. The mixture is processed into a smooth dough, then shaped into balls or logs and coated or rolled as desired. This marzipan offers a keto-friendly alternative to traditional sugary versions with customizable sweetness and flavor.

Description

This Sugar Free Keto Marzipan uses almond flour as the base combined with beaten egg (or water or rose water for egg-free), powdered sweetener, almond extract, and optional vanilla extract to form a smooth dough. The ingredients are blended in a food processor or kneaded by hand until the mixture holds together well. The dough's sweetness can be adjusted by increasing the sweetener to taste. The marzipan can be rolled into small balls and coated with cocoa powder or dipped in sugar-free chocolate, or shaped into a log and sliced. After preparation, it is stored in the refrigerator for freshness. This keto marzipan has approximately 9 grams net carbs per 15-gram serving, making it suitable for low-carb diets. Almond flour variations may require slight adjustments to moisture content. A splash of rum or brandy can be added for a spiced version. The marzipan can be frozen for longer storage or kept refrigerated up to one week if eggs are used.

  • cup / 107g powdered sweetener (use up to ¾ cup / 120g or even 1 cup / 160g if you prefer a sweet marzipan)
  • 2 teaspoon almond extract
  • 1 teaspoon vanilla extract optional, but recommended

Instructions

  1. Put all ingredients in a food processor and blend until a dough ball forms. Alternatively, knead with your hands until smooth.

Notes

  • Adjust moisture by adding water or more almond flour if dough is too wet or dry.
  • Optionally add 1 teaspoon rum or brandy for a flavored variation.
