The correct consistency is reached when the liquid coats the back of a spoon and holds a line drawn with a finger.

Instructions

  1. Add all ingredients to a non-stick large (~12") sauce pan or skillet with high sides, and put on medium-high heat.
  2. Get it to slow boil for about 10 minutes, stirring with a wooden spoon or silicone spatula, until it's thickened to coat the back of the spoon.
  3. Let it cool down before transferring to a jar. The sugar-free condensed milk will thicken more as it cools. To prevent formation of skin on top, stir it a few times as it cools, or cover it with waxed paper or cling wrap touching the surface.

  • Use a wide skillet to speed up evaporation and reduce cooking time.
  • Avoid erythritol sweeteners to prevent grainy texture; use allulose or xylitol instead.
  • Adjust sweetness by increasing sweetener up to 30 grams or adding liquid sweeteners after cooking.
