Suspiritos [Recipe + Video] (Merenguitos Meringue Kisses)

Suspiritos, or Merenguitos Meringue Kisses, are light and airy meringue cookies made from whipped egg whites and sugar, flavored optionally with vanilla, fruit extracts, cocoa, or coffee. These small piped meringues bake at a low temperature until crisp on the outside and fully dry or with a soft center depending on baking time. The choice of flavorings and optional sprinkles allows customization for various tastes and occasions.

Description

Suspiritos are delicate meringue kisses made by whipping egg whites with cream of tartar and sugars until stiff peaks form, then piping them into small shapes on a baking sheet. The recipe includes flexibility in flavoring with options such as vanilla, pineapple, banana, almond extracts, as well as cocoa powder or instant coffee to add subtle flavor variations. Decoration with sprinkles adds color and texture.

They are baked at a low oven temperature (175 ºF/80 ºC) for 2.5 to 3 hours, which gently dries the meringue. Bakers can choose to bake them until they are completely dry and crisp or stop earlier to retain a slightly soft center, in which case they should be eaten fresh to enjoy the texture. Using clear vanilla extract helps retain the pure white color of the meringue, while brown vanilla extract adds a creamy tan hue.

These meringue kisses make a light, sweet treat or decorative garnish for desserts. Their crispness and mild sweetness complement coffees, teas, or dessert plates.

Ingredients

Servings
  • 3 egg from 3 medium eggs or 2 egg whites from 2 large egg [100 g], at room temperature, white
  • ¼ teaspoon cream of tartar
  • ½ cup granulated sugar 100 g
  • cup powdered sugar 1 cup minus 2 tablespoons [100 g], sifted

Flavorings (pick one)

  • 1 teaspoon vanilla extract (see notes)
  • 1 teaspoon pineapple extract
  • 1 teaspoon banana extract
  • 1 teaspoon almond extract
  • 1 tablespoon unsweetened cocoa powder
  • ½ teaspoon instant coffee

Decoration (optional)

  • Sprinkles of your choice

Instructions

1. Get ready

  1. Line baking sheet (or baking sheets if you are doubling the recipe) with parchment paper or silicone liner. Heat the oven to 175 ºF [80 ºC].

2. Whisking

  1. In the bowl of a stand mixer, or large mixing bowl, and the wire whisk attachment, whisk the egg whites over medium speed until they become foamy. Incorporate the granulated sugar and cream of tartar and whip over high speed until they form peaks.Add the powdered sugar and pour in the flavoring of your choice and whisk over high speed until it forms very stiff peaks, and if you hold the spatula upside down the meringue doesn't fall.

3. Form meringue kisses

  1. Scoop the meringue mixture into a pastry bag, add the tip of your choice (I used a star tip and a round tip for these), and pipe the suspiritos of about 1½ inches [4 centimeters] in diameter onto the prepared cookie sheet.Sprinkle with decorations of your choice (optional)

4. Baking

  1. Bake for two and a half to three hours in preheated oven, or until the suspiritos are completely dry, sound hollow when you tap them, and easily separate from the try liner when lifted. Turn off the oven and leave them to cool down inside until the oven temperature is back at room temperature.

5. Serving and storing

  1. Consume immediately, or store in an airtight container. They should keep for a few days if they are properly dry, and properly stored.

Notes

  • Use clear vanilla extract to keep the meringues bright white; brown vanilla extract will give a creamier color.
  • Bake fully for crisp meringues, or slightly less to keep a soft center; consume these fresh.
