Sweet and Sour Sauce Recipe
Description
The Sweet and Sour Sauce involves heating pineapple juice, brown sugar, rice vinegar, ketchup, and low sodium soy sauce together to blend the flavors. Bringing this mixture to a boil helps dissolve the sugar and develop a homogenized sauce base. A slurry of cornstarch and water is then whisked in to thicken the sauce to a smooth, glossy texture, which coats dishes nicely.
The resulting sauce has a flavorful balance of sweetness from the pineapple and sugar, acidity from the vinegar and ketchup, and umami from the soy sauce. The light thickening ensures it clings well to proteins or vegetables when served.
This sauce is ideal for use in stir-fries, dipping sauces, or as a glaze for cooked meats and seafood. Allowing it to cool before serving lets it set slightly without losing the sheen or taste.
