Ingredients
Pizza
- 1 pound ground beef
- 1 (1-ounce) packet taco seasoning
- ⅔ cup water
- 1 cup vegetable oil
- 8 flour tortillas, taco size
- 1 (15-ounce) can refried beans
- 1 (10-ounce) can Red Enchilada Sauce
- 2 cups shredded Mexican cheese blend
Toppings
- diced tomatoes
- sliced green onion
- sliced olives
- sour cream
Instructions
- Preheat oven to 400°F. In a large saucepan or skillet over medium heat, cook ground beef until no longer pink and crumbly. Drain grease.
- Increase heat to medium-high heat. Add taco seasoning and water and cook until water is evaporated making sure to stir occasionally (about 5 minutes).
- In a separate large skillet, heat 1 cup vegetable oil over medium heat. Add one of the 8 flour tortillas (taco size) and cook for about 3-4 minutes (flipping frequently) until crisp. Continue with the rest of the tortillas. Set aside.
- Meanwhile, heat the 15-ounce can of refried beans in a microwaveable-safe bowl. This will make it easier to spread the beans onto the tortilla shells.
- On each fried tortilla, slather a generous layer of refried beans. Then top with seasoned ground beef.
- Place another tortilla on top. Slather about two tablespoons from the 10-ounce can of enchilada sauce on top. Place some of the 2 cups of shredded Mexican cheese blend on top of the sauce. Continue assembling the rest of the pizzas.
- Place the pizzas on a large nonstick baking sheet and bake for about 8-10 minutes or until the cheese is melted. Serve with your favorite toppings like diced tomatoes, sliced green onion, sliced olives, and sour cream.
Notes
- Recipe Tips
- Air fryer directions:
- Prep ahead of time. Prepare the different elements of the dish the day before and keep them stored separately until you are ready to assemble and bake.
- Store. Remove any toppings and place in an airtight container or plastic wrap. Refrigerate for up to 4 days.
- To reheat. Preheat the oven to 350°F and place the desired number of pizzas on a baking sheet. Heat for about 10 minutes or until warm through. If you're on the go or short on time, you can reheat them in the microwave.
- The signature crunch comes from frying the tortillas first, so don't skip that step.
- Make a spicey pizza by sprinkling in red pepper flakes or adding jalapenos.
- This is a favorite recipe to make using leftover taco meat and beans from other meals.
- Preheat air fryer to 400°F. Prepare the meat as directed.
- Place a flour tortilla in the air fryer basket. Cook for about 2-3 minutes, until crispy, flipping halfway through the cooking time. Repeat with the remaining tortillas.
- Assemble the pizzas as directed in the recipe.
- Place the pizzas, one at a time, in the air fryer basket and cook for about 5-7 minutes, until the cheese is melted and bubbly.
- Serve the air-fried Mexican pizzas hot, topped with your desired toppings.
