Taco Soup Recipe

Taco Soup Recipe combines browned ground beef, diced vegetables like onion, zucchini, squash, and carrot, with multiple types of beans, green chiles, tomato sauce, and seasonings in a broth base. It simmers until flavors meld, creating a hearty, spiced soup suitable for topping with cheese, cilantro, or tortilla chips.

Description

This Taco Soup Recipe starts by browning ground beef in a large pot, then incorporating diced onions, zucchini, yellow squash, and carrots to develop flavor and texture. After softening the vegetables, canned beans (black, garbanzo, and white), diced green chiles, tomato sauce, taco seasoning, ranch seasoning, and corn are added with broth to form the soup base. The mixture is brought to a boil and then simmered for 35-40 minutes, allowing the flavors to combine and the vegetables to soften fully.

The soup offers a blend of meaty, savory, and slightly spicy elements balanced by the natural sweetness of corn and the freshness of vegetables. The use of multiple bean varieties adds texture and protein. The broth-based soup can be customized with toppings such as shredded cheddar cheese, cilantro, green onions, sour cream, guacamole, or tortilla chips, adding complementary flavors and textures.

This recipe yields a substantial and comforting soup often appropriate for casual meals or year-round serving. It’s straightforward to prepare and can be adapted with different toppings as preferred by the cook or diners.
