Ingredients
- 1 pound lean ground beef
- 1 small chopped onion
- 1 (1-ounce) package taco seasoning
- ½ cup water
- 1 (14.5-ounce) can corn with peppers, drained
- 1 (8-ounce) package chive and onion cream cheese
- 1 cup shredded cheddar cheese
- 8 ounces cooked and drained egg noodles
Optional Toppings
- cilantro
- tortilla strips
- olives
- tomatoes
Instructions
- In a large skillet, cook 1 pound lean ground beef and 1 small chopped onion until browned then drain the fat.
- Add 1 (1-ounce) package taco seasoning, ½ cup water, and 1 (14.5-ounce) can corn with peppers, to the beef mixture. Cook for 1-2 minutes.
- Stir in 1 (8-ounce) package chive and onion cream cheese and 1 cup shredded cheddar cheese; cook until it is heated through and the cheese melts.
- Serve over 8 ounces cooked and drained egg noodles and top with optional toppings.
