Description
Tandoori Chicken preparation involves coating boneless chicken thighs with a marinade made from plain yogurt, crushed garlic and ginger, lemon juice, and a blend of spices including garam masala, paprika, cumin, turmeric, cardamom, chili powder, salt, and pepper. The yogurt tenderizes the meat while the spices provide a complex aromatic profile.
The chicken is allowed to marinate for a minimum of 30 minutes, up to 12 hours, for deeper flavor penetration. Cooking involves baking and broiling at the oven’s highest temperature using a wire rack over a tray, which replicates the intense heat and charring of a traditional tandoor oven. This method locks in juices and creates slightly charred edges.
After cooking, resting the chicken ensures juices redistribute for moistness. The final dish serves well as a main course paired with rice, naan, or salad for an Indian-inspired meal.
Ingredients
- 1 lb (500g) chicken thigh boneless
- 1 cup PLAIN yogurt
- 3 garlic crushed, cloves
- 2 tsp ginger crushed
- 2 tbsp lemon juice
- 1 tbsp garam masala
- 2 tsp paprika
- 1 tsp cumin ground
- 1 tsp Turmeric
- 1 tsp ground cardamom
- ½ tsp chilli powder
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Combine all the marinade ingredients together and add the chicken.
- Allow to marinade for at least 30 minutes up to 12 hours covered in the fridge.
- Preheat the oven and the broiler (oven grill) to its hottest temperature. This is the best way to emulate a traditional Tandoor oven used in Indian restaurants.
- Place marinated chicken, skin-side up, on a wire rack set over a rimmed baking tray or sheet pan lined with aluminum foil.
- Place the chicken in the oven and allow to bake and broil for 20-30 minutes or until the chicken is starting to char and is cooked through.
- Remove from the oven and allow to rest for 5 minutes before serving.
