Tartar sauce is a variation of traditional French mayonnaise, enriched with fresh herbs and other condiments.

Ingredients
- 1 egg yolk
- 1 pinch salt fine
- 2 tablespoons mustard hot
- 1 cup peanut oil (or other vegetable oil)
- 1 teaspoon white wine vinegar
- 1 tablespoon tarragon dry
- 1 tablespoon parsley flat-leaf, finely chopped
- 1 tablespoon capers roughly chopped with a knife, pickled
- 4 cornichons , French small pickled cucumbers, finely diced
- black pepper , freshly ground (to taste)
Equipment
- Electric whisk
Instructions
- In a bowl, pour the egg yolk, pepper, salt and mustard.
- Then whisk everything together using an electric or manual whisk.
- While whisking, pour in the oil very gradually.
- As soon as the mayonnaise becomes firm, add the vinegar.
- Add the rest of the ingredients to the mayonnaise.
- Adjust the seasoning with salt and pepper to taste.
