Ingredients
For the Sausage Gravy:
- 1 pound breakfast sausage
- ¼ cup all-purpose flour
- 2 cups whole milk
- salt and pepper to taste
For the Tater Tot Bowls:
- 1 bag (32 oz) frozen tater tots
- 1 cup shredded cheddar cheese
- 4 large eggs
- ¼ cup chopped green onions
- ¼ cup chopped fresh parsley (for garnish)
- Hot sauce (optional, for serving)
Instructions
Prepare the Tater Tots:
- Preheat the oven according to the tater tot package instructions. Spread the tater tots on a baking sheet and bake until crispy and golden brown, about 20-25 minutes.
Prepare the Sausage Gravy:
- While the tater tots are baking, cook the breakfast sausage in a large skillet over medium heat until browned and cooked through. Remove the sausage with a slotted spoon and set aside, leaving the grease in the skillet.
- Add the flour to the skillet and whisk for 1-2 minutes to create a roux.
- Gradually whisk in the milk, stirring constantly, until the mixture thickens into a gravy. Season with salt and pepper to taste.
- Return the cooked sausage to the skillet and mix well. Keep the gravy warm over low heat.
Prepare the Eggs:
- Cook the eggs to your preference (scrambled, fried, or poached).
Assemble the Breakfast Bowls:
- Divide the crispy tater tots among four bowls.
- Top each bowl with a generous scoop of sausage gravy
- Add the cooked eggs on top of the gravy.
- Sprinkle with shredded cheddar cheese and chopped green onions.
- Garnish with fresh parsley and add a dash of hot sauce, if desired.
