Ingredients
- 2 Tablespoons neutral cooking oil generic cooking oil
- 1 1/2 lbs. chicken breast (sliced)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup red pepper sliced
- 1 cup yellow pepper
- 1 cup orange pepper
- 1 cup chicken broth
- 1 Tablespoon ginger minced, fresh
- 2 Tablespoons Chili garlic sauce
- 1 Tablespoon hoisin sauce
- 1-2 Tablespoons peanut butter
- 6-8 ounces rice noodles
- 2 green onions (thinly sliced)

- peanut optional, chopped
Instructions
- Heat the oil in large skillet over medium high heat.
- Add chicken breast and saute for 4-5 minutes. Sprinkle with salt and pepper. Add peppers. Saute for 6-8 more minutes until chicken is cooked thorough.
- In small bowl, combine chicken broth, ginger, chili garlic sauce, hoisin sauce, and peanut butter. Whisk together.
- Reduce heat to low and add sauce.
- Cook rice noodles according to package instructions.
- Toss noodles with chicken and sauce. Season to taste.
- Top with green onions, cilantro and peanuts (optional).
Notes
- Increase peanut butter by 1 tablespoon to intensify the peanut flavor.
- For a coconut twist, add 1/4 to 1/2 cup canned coconut milk to the sauce.
