Thai Chicken Pizza
Description
This Thai Chicken Pizza starts with a prepared pizza dough rolled out on a baking sheet dusted with cornmeal to prevent sticking. The dough is topped with sweet Thai chili sauce for a spicy-sweet base, then layered with shredded mozzarella and pieces of pre-cooked grilled chicken, lending a hearty protein element. Baking at 500 degrees Fahrenheit for 8-10 minutes heats the toppings thoroughly and crisps the crust edge.
While the pizza bakes, fresh vegetables are prepared: diced red bell pepper provides mild sweetness and crunch, julienned carrots add subtle earthiness and texture, and chopped green onions and cilantro contribute freshness and herbaceous flavor. The peanut sauce, made by whisking peanut butter with honey, soy sauce, rice wine vinegar, sesame oil, and seasoning, brings creaminess and umami that complement the Thai chili sauce.
After baking, the vegetables are spread over the hot pizza, which is then drizzled with the peanut sauce and sprinkled with salted chopped peanuts. The result is a pizza that contrasts warm, melty cheese and chicken with crisp, fresh vegetables and a balance of spicy, sweet, and nutty flavors. Slicing into wedges makes it suitable for sharing as a unique dinner or casual meal.
