Thai Peanut Dressing

The Thai peanut dressing is zesty tangy and slightly sweet, the perfect topping to green salads, cold pasta salads, or a veggie dip. Such a versatile, delicious dressing!

  • 1 cup mayonnaise
  • ¼ cup milk
  • ¼ cup peanut sauce
  • 2 Tablespoon rice vinegar
  • 1 Tablespoon honey
  • 1 Tablespoon fresh chopped cilantro
  • 2 Tablespoon unsalted peanuts

Instructions

  1. In a blender, mix together everything but the cilantro and peanuts until thoroughly combined.
  2. Then add the cilantro and peanuts and pulse just a few times. Keep refrigerated.
  3. Serve over green salads, and pasta salads, or use as a vegetable dip.

  • I made this dressing in my Blendtec blender, which makes it creamy and smooth, but you can use any blender or food processor you have. Or just whisk by hand in a large bowl!
