The Thai peanut dressing is zesty tangy and slightly sweet, the perfect topping to green salads, cold pasta salads, or a veggie dip. Such a versatile, delicious dressing!

Ingredients
- 1 cup mayonnaise
- ¼ cup milk
- ¼ cup peanut sauce
- 2 Tablespoon rice vinegar
- 1 Tablespoon honey
- 1 Tablespoon fresh chopped cilantro
- 2 Tablespoon unsalted peanuts
Instructions
- In a blender, mix together everything but the cilantro and peanuts until thoroughly combined.
- Then add the cilantro and peanuts and pulse just a few times. Keep refrigerated.
- Serve over green salads, and pasta salads, or use as a vegetable dip.
Notes
- I made this dressing in my Blendtec blender, which makes it creamy and smooth, but you can use any blender or food processor you have. Or just whisk by hand in a large bowl!
