The Best Easy Keto Buckeyes Recipe
Description
The Best Easy Keto Buckeyes Recipe combines natural or all-natural peanut butter with softened salted butter and vanilla extract to create a creamy base. Sweetened with powdered sugar or a sugar substitute, this mixture is chilled and then shaped into balls to give a dense yet tender texture. Each ball is dipped in melted semisweet chocolate mixed with coconut oil, which provides a glossy, firm but delicate coating that crisps as it sets. The chocolate coating is carefully applied using a toothpick to keep the classic 'buckeye' look with the peanut butter center visible on top.
This recipe is a great choice for those following keto or low-carb lifestyles or anyone who enjoys rich peanut butter and chocolate treats. The finished buckeyes can be served at dessert tables, holiday gatherings, or as a special snack. They pair well with coffee or tea and are convenient finger foods for sharing or gifting.
Notes advise storing the buckeyes in an airtight container in the refrigerator for up to a week or freezing them for up to three months to maintain freshness. Stirring coconut flour into runny natural peanut butter can improve the mixture's consistency for easier shaping. It's important to dip the chilled peanut butter balls while they're still cold to ensure the chocolate adheres properly and to prevent sweating. Excess chocolate left after dipping can be saved for reuse, indicating efficient ingredient use in the process.

- 1 teaspoon vanilla extract
- 3½ cups sugar substitute if not keto, use powdered sugar, Confectioners Swerve brand
- 3 cups semisweet chocolate chips if not keto, you can use chocolate wafers for easiest melting, lily’s
- 1 tablespoon coconut oil
Instructions
- Add the peanut butter, butter, and vanilla to a large bowl or stand mixer and cream together for 30 seconds.
- Sift the Swerve or powdered sugar into the bowl and beat until smooth.
- Chill the mixture in the refrigerator for 30 minutes.
- Line a cookie sheet with parchment paper and portion the peanut butter mixture out with a medium cookie scoop and roll into balls.
- Place them on the cookie sheet and chill in the freezer for 20 to 30 minutes.
- Just before removing the balls from the freezer, melt the chocolate an coconut oil in a wide glass on 30-second intervals, stirring between each, until fully melted.
- Use a toothpick to spear the balls and dip them in the melted chocolate. Use a fork to help remove the toothpick from the ball and place back on the parchment paper.
- Use your finger or a paring knife to lightly cover the hole from the toothpick.
- Allow to set until the chocolate hardens.
Notes
- Store finished buckeyes chilled in an airtight container for up to 7 days or freeze up to 3 months for longer storage.
- If peanut butter is too runny, mix in up to 2 tablespoons coconut flour to firm it up before forming balls.
- Dip the peanut butter balls into melted chocolate while they are still cold from freezing to prevent sweating and ensure the chocolate sticks well.
- Reserve any excess melted chocolate after dipping for future use, as the dipping requires a deep pool of chocolate.
- If using chocolate wafers instead of chips for the full sugar version, omit the coconut oil in the melting step.
