The BEST Marinated Tofu (Ginger Tofu)
Description
The recipe begins with slicing extra-firm tofu into triangles that maintain structure during cooking. A marinade made of fresh orange juice, rice vinegar, soy sauce, vegetable and sesame oils, minced garlic, grated ginger, and red pepper flakes combines sweet, sour, salty, and slightly spicy elements. The tofu soaks in this mixture for at least 30 minutes, ideally overnight to deepen flavor penetration.
Baking the tofu at 350°F allows it to absorb most of the marinade while developing a golden exterior. The sprinkled green onion and cilantro contribute a fresh herbal note that complements the marinade's warmth. The tofu presents a firm yet tender texture with balanced complex flavors highlighted by the ginger and citrus components.
Adjust the marinade components to suit taste preferences, increasing orange juice for sweetness, soy sauce for saltiness, or red pepper flakes for heat. Using extra-firm tofu is essential to preserve shape throughout marinating and baking.
Ingredients
- 1 extra firm tofu 16-ounce package
- 1 cup orange juice fresh
- ¼ cup rice vinegar
- ⅓ cup soy sauce
- ⅓ cup vegetable oil
- 4 teaspoons sesame oil
- 3 garlic minced, cloves
- 1 tablespoon ginger grated
- ¼ teaspoon red pepper flakes
- ¼ cup green onion chopped
- ¼ cup cilantro chopped
Instructions
- Turn the tofu onto its side lengthwise and cut it into slices. Then, cut those slices into 2 triangles. This should yield between 8-16 triangles.
- For the marinade ingredients, combine the orange juice, vinegar, soy sauce, oils, garlic, ginger, and red pepper flakes in a bowl and whisk.
- Lay the tofu in a glass baking dish in a single layer and pour the marinade over until the tofu is completely submerged. Evenly sprinkle the green onion and cilantro on top of the tofu. Allow the marinade to sit for at least 30 minutes and up to overnight if you have the patience that I do not possess.
- Then, preheat the oven to 350F/160C. Pour out a portion of the marinade so that the tofu is only about halfway submerged. Put it in the oven for about 40 to 45 minutes, until the baked tofu is golden and most of the marinade has been absorbed.
Notes
- Extra-firm tofu works best to maintain shape during marinating and baking; softer varieties may crumble.
- Marinate the tofu overnight when possible to maximize flavor absorption.
- Adjust the marinade by increasing orange juice, soy sauce, vinegar, or red pepper flakes to fit your taste preferences.
