The Best Peach Sorbet Without Ice Cream Maker

The Best Peach Sorbet Without Ice Cream Maker transforms ripe yellow peaches into a smooth, icy dessert by blending them with caster sugar and lemon juice before freezing. The peach-to-sugar ratio and lemon juice addition balance sweetness and acidity, producing a refreshing, naturally fruit-forward sorbet without specialized equipment.

Description

This peach sorbet uses peeled and sliced ripe yellow peaches blended with caster sugar and a splash of lemon juice to enhance the fruit's brightness. The ingredients are processed until smooth and frozen until firm. The measured ratio of about 4 parts fruit to 1 part sugar provides the correct sweetness and texture for a scoopable sorbet.

The lemon juice is added gradually to taste, which brightens the peach flavor and balances sweetness. The smooth puree freezes to a firm consistency that can be scooped, making for a straightforward frozen dessert ideal for warmer days.

This recipe requires no ice cream maker, using only a food processor and freezer. The natural peach flavor dominates and is preserved with minimal added sugar.

Adjusting the fruit-to-sugar ratio proportionally allows scaling the recipe without altering texture. The amount of lemon juice can be varied to taste.

Ingredients

Servings
  • 800 g peach ripe, yellow, peeled and sliced; fresh or frozen
  • 200 g caster sugar (see notes)
  • 1 tbsp* lemon juice to taste (see notes)

Instructions

  1. Slice the peaches into 8, and peel each slice.
  2. Place peach slices in the bowl of a food processor, along with sugar and process until smooth, scraping down the sides as you go.
  3. Once smooth, add lemon juice to taste.
  4. Freeze for 6-7 hours, or until firm.

Notes

  • Gradually add lemon juice to taste to brighten the peach flavor without overpowering it.

  • The recipe is adaptable by scaling fruit and sugar while keeping the ratio consistent.
  • This sorbet can be made using fresh or frozen peaches as long as they are ripe and peeled.
