The Classic Mushroom Cookies Recipe

The Classic Mushroom Cookies are a sweet treat made by blending flour, sugar, butter, and margarine into a crumbly dough, then enriched with mayonnaise and eggs for moisture. Using a specialized mold, small dough portions are shaped and baked to a golden brown. The filling combines dulce de leche and butter with toasted cookie crumbs, creating a creamy, sweet center. Pressing the filled halves together forms a cookie resembling a mushroom, offering a unique shape and rich texture.

Description

The Classic Mushroom Cookies Recipe results in delicate cookies combining a crumbly dough base with a smooth dulce de leche and butter filling mixed with cookie crumbs. The dough is made by rubbing butter and margarine into a sugar-flour mixture, then binding with mayonnaise, eggs, and baking powder. Using an 'oreshnitsa' mold, the dough portions are baked until golden. The filling is prepared by beating butter with dulce de leche and incorporating the crumbled baked dough. The two halves are pressed together to create a mushroom-shaped cookie. This method yields a textural contrast between the crisp cookie exterior and creamy interior, making a visually distinctive and sweet snack or dessert.

Ingredients

Servings
  • 1 1/2 cups white sugar
  • 5 cups all-purpose flour
  • 3/4 cup butter room temperature, unsalted
  • 3/4 cup margarine room temperature
  • 1 tbsp baking powder
  • 1/4 cup mayonnaise
  • 4 egg
  • 16 oz dulce de leche
  • 1 cup butter room temperature, unsalted

Instructions

  1. Combine the flour and sugar together.
  2. Rub the butter and margarine into the flour and sugar until the mixture looks like fine bread crumbs.
  3. Make a well in the middle of the flour. Place the mayonnaise, eggs, and baking powder in the well. Incorporate the wet ingredients into the dry ingredients by hand (or place the ingredients in the bowl of an electric mixer instead).
  4. Using an oreshnitsa maker, place small pieces of dough inside each metal form. Close the mold and cook the cookies until golden brown.
  5. Remove the excess dough off the sides of the mold.
  6. Break the excess pieces of dough into crumbs.
  7. To make the filling, beat the butter with the dulce de leche. Next, add in the cookie crumbs and stir to combine.
  8. Fill each side of the cookie molds with the creamy filling and press the two cookies together to form a whole mushroom. Enjoy!
