Tofu Fajitas
Description
This recipe for Tofu Fajitas involves pressing extra firm tofu to remove moisture, then breaking it into chunks. These chunks are combined with sliced bell peppers, onions, minced garlic, taco seasoning, and vegetable oil, ensuring thorough seasoning. The mixture is spread on a baking sheet and roasted at 425°F for about 25-30 minutes until cooked through and edges are slightly crisp.
The oven roasting concentrates the flavors and cooks the vegetables and tofu evenly. The seasoning blend imparts classic fajita flavors including chili, cumin, and smoked paprika. This dish can be served in warmed tortillas, garnished with optional toppings such as avocado, cilantro, lime slices, vegan cheese or sour cream, and salsa.
Additional ingredients like mushrooms can be added or swapped, and homemade taco seasoning is suggested for freshness. Even cooking relies on evenly slicing vegetables. Warming tortillas enhances softness and pliability for filling.
