Tomato Chutney

Tomato Chutney in this recipe is a savory, gently spiced condiment featuring cooked tomatoes, garlic, red onion, green chili, and coriander. The tomatoes are softened in oil and then mashed into a smooth base, blended with spices and fresh herbs to create a tangy and mildly spicy accompaniment commonly served with Indian or South Asian meals.

Description

This chutney begins by softening halved tomatoes and whole garlic cloves in neutral oil over low heat. Once softened, the tomato skins are removed and the fruit is mashed into a smooth consistency. Salt, chili powder, diced red onion, green chilies, and fresh coriander are then incorporated and cooked briefly to meld the flavors while maintaining texture.

The result is a flavorful chutney balancing acidity from the tomatoes with the heat of chili and sharpness from onion and coriander. Its smooth base and fresh herbaceous notes make it suitable as a side for breads, rice dishes, or grilled meats.

This type of chutney can be stored refrigerated and used to complement a variety of meals. The recipe provides a straightforward approach to a classic tomato-based chutney using common pantry ingredients.
