Tomatoes on Toast is a quick and easy lunch, which is always a great way to use up all those delicious end of season tomatoes.

Ingredients
- 4 lice bread
- 2 tablespoon butter
- 500 g tomato sliced
- 50 g soft goats cheese crumbled
- 1 tablespoon olive oil
- 2 pinch sea salt and ground black pepper
Instructions
- Toast 4 slice Bread and spread 2 tablespoon Butter over it.
- Add 50 g Soft goats cheese.
- Add 500 g Tomato (sliced). Drizzle with 1 tablespoon Olive oil and season with 2 pinch Sea salt and ground black pepper.
Notes
- A drizzle of olive oil makes a real difference to this, but it is optional.
- Liven the whole dish up with some homemade pesto or balsamic glaze drizzled on top.
- You can swap the sourdough loaf for bagel to mix things up.
