An elevated tuna salad using sweet corn and green beans with a mayo based dressing.

Ingredients
Dressing
- 2 teaspoon Greek yogurt
- ½ cup mayo
- 1 lime, (juiced)
- ½ cup Parmesan cheese, (grated or any other sharp cheese)
- 2 teaspoon olive oil
- ½ teaspoon cracked pepper
- ½ teaspoon smoked paprika
salad
- 6 oz can of tuna, (solid white albacore if possible)
- 1 cup frozen sweet corn, (thawed)
- ½ cup frozen green beans, (thawed and diced)
- 2 green onions, (sliced thinly)
- ½ cup cilantro, (sliced)
Instructions
- In a large serving bowl, Mix together all of the dressing ingredients until well combined.
- Then, flake the canned tuna directly into the bowl (unless you have pre-flaked tuna). Add the thawed corn and green beans, green onions, and cilantro to the bowl and toss well.
- Serve with a pinch of paprika on top.
