Turkey Picadillo

Turkey Picadillo is a savory ground turkey dish simmered with a fresh sofrito of onion, garlic, red bell pepper, tomato, and cilantro, combined with olives and tomato sauce. Ground cumin, bay leaves, and brine deepen the flavor. The result is a rich, seasoned mixture often served as a main or filling.

Description

This Turkey Picadillo starts by browning lean ground turkey, breaking it into small pieces. A sofrito made from finely chopped onion, garlic, red bell pepper, tomato, and cilantro is then added. This vegetable base infuses the dish with fresh flavor and moisture.

Green Spanish olives and their brine contribute savory, tangy notes that enhance the overall taste. Ground cumin and bay leaves add warmth and complexity. The ingredients simmer together in tomato sauce and a little water, allowing flavors to meld over about 15 to 20 minutes on low heat.

The resulting mixture has a balanced savory and slightly tangy profile ideal for serving over rice, stuffing into tortillas, or accompanying other sides. The recipe is straightforward and relies on layering fresh ingredients and spices to create a hearty dish.

Ingredients

Servings
  • 1.33 lb ground turkey 93% lean
  • 1 tomato medium
  • 4 oz tomato sauce ((1/2 can))
  • 1/2 onion finely chopped, medium
  • 1 tsp kosher salt
  • 2 cloves garlic minced
  • 1 tsp cumin ground
  • 2 tbsp red bell pepper (finely chopped)
  • 2 small bay leaf
  • 2 tbsp cilantro (optional)
  • 2 tbsp olives plus 2 tbsp brine, green, Spanish, pitted

Instructions

  1. Brown the ground turkey on medium heat in large sauté pan and season with salt and pepper. Use a wooden spoon to break the meat up into small pieces.
  2. Meanwhile, while turkey is cooking, make the sofrito by chopping onion, garlic, pepper, tomato and cilantro. (I quickly do it in my mini chopper)
  3. Add sofrito to the meat and continue cooking on a low heat.
  4. Add olives and about 2 tbsp of the brine (this adds great flavor) cumin, bay leaves, and more salt if needed.
  5. Add tomato sauce and 1/4 cup of water and mix well.
  6. Reduce heat to low and simmer covered about 15 to 20 minutes to let the flavors meld.
