Turkey Taco Skillet

Turkey Taco Skillet combines seasoned ground turkey with onions, jalapeño, pinto beans, corn, and salsa in one pan. Topped with crumbled tortilla chips and melted Mexican cheese, it delivers a layered texture featuring crispy edges and melted cheese. Fresh cilantro, pickled red onions, tomatoes, and optional creamy toppings provide freshness and balance.

Description

This Turkey Taco Skillet starts with sautéed onions and jalapeños, then adds ground turkey seasoned with chili powder, smoked paprika, cumin, cayenne, salt, and pepper. Pinto beans, corn kernels, and salsa are stirred in for a spicy, savory base.

The skillet is topped with crumbled tortilla chips and shredded Mexican cheese blend, then covered briefly to melt the cheese, creating a crispy-cheesy crust over the flavorful filling. Optional toppings like chopped cilantro, pickled red onions, chopped tomatoes, guacamole, or sour cream add layers of freshness, acidity, and creaminess.

The dish is finished with lime wedges for squeezing over each serving, enhancing brightness and cutting richness. This one-pan meal offers a convenient option for a filling and hearty dinner with familiar southwestern flavors.

Ingredients

Servings
  • 1 teaspoon olive oil
  • 1 yellow onion (finely chopped)
  • 1 jalapeño (seeds removed and diced)
  • 1 lb ground turkey 93% lean
  • salt
  • black pepper
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin ground
  • ¼ tsp cayenne pepper
  • 3/4 cup pinto beans drained, canned
  • 3/4 cup corn kernels
  • 12 oz salsa about 1 jar, jarred
  • 32 tortilla chips (about 4 oz)
  • 1 cup Mexican cheese blend shredded, reduced fat
  • 2 tablespoons cilantro for topping, chopped
  • red onion for topping, pickled
  • 1/4 cup tomato for topping, chopped
  • lime wedges
  • guacamole (sour cream, avocado, optional for topping)

Instructions

  1. In a large skillet over medium heat, warm the olive oil. When heated, add the onion and jalapeño and sauté for 2 to 3 minutes.
  2. Add the ground turkey and season with salt and pepper. Cook the turkey until it is browned, crumbling the meat into small pieces as it cooks.
  3. Add the chili powder, smoked paprika, cumin, cayenne, pinto beans, corn and salsa. Mix well. Let the mixture cook for 3 minutes.
  4. Lightly crumble the chips over the top of the turkey, then sprinkle the cheese over the top of the chips.
  5. Cover the turkey skillet with a lid and let it cook for 1 to 2 minutes, or until the cheese melts or place it under the broiler 2 to 3 minutes.
  6. Remove the pan from the heat and top the turkey skillet with chopped cilantro, pickled red onions, chopped tomatoes, plus optional toppings like avocado, guacamole or sour cream, if desired and serve with lime wedges.
