Homemade Turkish Delight, or Lokum, is a soft, chewy candy made from sugar, cornstarch, and water, tinted with red food coloring. After cooking and setting in a prepared pan, it is cut into small cubes and dusted with a cornstarch and powdered sugar mix, which prevents sticking. Description

The Turkish Delight recipe consists of cooking a mixture of water, granulated sugar, and cornstarch over medium heat until it thickens into a gel-like consistency. Red food coloring is added to give the candy its characteristic hue. The mixture is poured into a parchment-lined pan and left to set at room temperature for at least four hours until firm.

Once set, the firm candy is flipped onto a surface dusted with a blend of powdered sugar and cornstarch, which helps prevent sticking. It is then cut into bite-sized cubes and tossed again in the sugar and cornstarch mixture. The resulting candy has a delicate chew with a smooth surface, subtly sweetened.

Turkish Delight is traditionally stored in an airtight container at room temperature, with parchment paper between layers to maintain texture and prevent moisture buildup. It should be consumed within two weeks and never refrigerated or frozen, as moisture would affect the texture adversely.

Ingredients

  • 3 1/2 cup water
  • 3 cups granulated sugar
  • 1 cup cornstarch
  • 6 red food coloring drops

Topping

  • 3 tbsp cornstarch
  • 3 tbsp powdered sugar

Instructions

  1. Brush the bottom and sides of a 9x9 baking pan a bit of oil. Then line it with parchment paper and set aside.
  2. In a 4 quart saucepan place the water, sugar and cornstarch. Place the saucepan over medium high heat. Once it comes to a simmer, lower the heat to medium and stir constantly until it’s thickened and has the consistency of gel. The mixture will be thick, but still pourable.
  3. Add drops the food coloring and stir to combine. If you like it darker, add more food coloring. Cook for another 10 minutes and then turn the heat off.
  4. Pour the mixture into the prepared baking pan and let it sit at room temperature for 4 hours or until solid.
  5. Mix the powdered sugar with some cornstarch and sprinkle half of it on a clean surface such as a cutting board. Gently flip the solid lokum onto the board and top it with more cornstarch and powdered sugar mixture. Using a large knife, slice the lokum vertically and horizontally into 1 inch cubes.
  6. Toss in the cornstarch and powdered sugar mix again and plate.

  • Store Turkish Delight in an airtight container with parchment paper between layers to prevent sticking.
  • Keep at room temperature in a cool, dry place; do not refrigerate or freeze to avoid moisture buildup.
  • Allow at least 4 hours for the mixture to set completely; letting it sit overnight can improve firmness.
