Turkish Flour Halva

Turkish Flour Halva is a sweet, dense dessert made by toasting flour in butter and oil until deeply browned, then cooking it with sugar syrup until thick and glossy. It has a smooth, rich texture and a deep, nutty flavor from the browned flour, served in small bite-sized portions.

Description

This Turkish Flour Halva recipe begins by preparing a sugar syrup with equal parts water and granulated sugar, heated until the sugar dissolves and the mixture boils. Separately, all-purpose flour is toasted in a mix of butter and vegetable oil in a heavy-bottomed pot over medium heat. Stirring continuously for 25 to 30 minutes, the flour darkens and becomes liquidy, developing a nutty aroma.

The hot sugar syrup is gradually incorporated into the toasted flour mixture, and the heat is returned to medium to allow the mixture to thicken while stirring. Once thick and well combined, the halva is removed from heat and stirred vigorously to cool down slightly before sitting covered for 15 minutes, which helps it set and fully develop flavor.

Once rested, the halva is portioned into small pieces using a spoon or cookie scoop. The final texture is dense yet tender, with a glossy surface from the syrup and a rich, buttery taste. This dessert is traditionally served in small portions due to its richness and is enjoyed as a sweet treat after meals or with tea.
