Description
Tuscan Pork Chops are prepared by dredging boneless pork chops in a flour mixture seasoned with salt, pepper, and garlic powder. The chops are seared in olive oil until golden, then set aside while the sauce is made in the same pan by sautéing pressed garlic, adding balsamic vinegar, chicken broth, honey, and diced Roma tomatoes. The mixture is brought to a boil, and the pork chops are returned to simmer covered with the sauce. Fresh baby spinach is added near the end to wilt gently. This method steeps the pork chops in a tangy, slightly sweet, and garlicky sauce that pairs well with the hearty meat. Optionally, shaving Parmesan over the finished dish can enhance the flavor further. This recipe combines pan-frying and simmering techniques to achieve tender pork with a savory sauce and greens.
Ingredients
- 3 tbsp flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 4 pork chops 1 in thick, boneless
- 2 tbsp olive oil
- 6 garlic pressed, cloves
- 1/3 cup balsamic vinegar
- 1/4 cup chicken broth
- 1 tbsp honey
- 2 Roma tomato diced
- 3 cups spinach fresh baby
Garnish (optional)
- Parmesan Cheese shaved
Instructions
- Combine the flour, salt, pepper, and garlic powder and dredge each pork chop in the mixture.
- Heat oil in a large skillet over medium high heat. Add pork chops to the oil and cook 2-3 min on each side until they are golden brown. Remove from skillet.
- Add garlic to the skillet and stir about 30 seconds. Then add vinegar, broth, and honey to the skillet, stirring to scrape and mix in any bits from the bottom. Add the tomatoes to the mixture snd bring the mixture to a boil.
- Add the pork chops back in, cover, reduce heat to low and simmer for 3-4 minutes, then add the spinach and recover for 2-3 minutes or until the spinach is wilted and the pork chops are done (165˚F internal temp).
