Two-tone Cookies Air Fryer

These two-tone cookies air-fryer give you the best of both flavours -rich chocolate and classic vanilla, all in one super delicious, buttery, and crunchy treat!

Ingredients

  • 110 g powdered sugar
  • 320 g all-purpose flour
  • 130 g butter
  • 1 egg
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 2 teaspoon vanilla
  • 2 tablespoon cocoa powder

Instructions

Prepare cookie dough

  1. Combine butter, vanilla, and powdered sugar using a hand mixer or whisk in a mixing bowl. Add an egg and mix well.
  2. Stir in all the dry ingredients. Mix with a spatula and knead into a soft dough with your hands. Cover the dough with a cling wrap and chill it for 30 minutes. 

Prepare cookie log

  1. Cut the cookie dough into two equal portions. Make a log (10 inches) of one portion. Cover it with parchment and chill it for 15 minutes.
  2. Knead cocoa powder into the other portion of the cookie dough. Roll into a rectangle of 10 inches long and any width, but it should be wide enough to cover the vanilla log.
  3. Place the vanilla log along one long side of the chocolate dough rectangle. Roll the chocolate dough tightly to enclose the log. Chill it for at least 30 minutes.
  4. Once chilled, remove the cookie log from the fridge and trim the ends. Slice the log into equal rounds. 

Reshape the cookies

  1. To fix the loose ends of the chocolate dough, gently press them with your fingers to seal them. They will stick to each other quickly. Reshape them if needed.

Air fry

  1. Line the air fry tray/basket with parchment paper. Preheat the air fryer for 5-8 minutes at 160°C.
  2. Place the cookies at a distance on the air fryer tray. Air fry these cookies for 12-15 minutes at 160°C or until golden.
  3. Leave the cookies in the basket/tray for 5 minutes before transferring them to a wire rack. Cool completely.
  4. Serve these yummy buttery two-toned cookies anywhere and anytime for a sweet craving!

Notes

  • Chill the dough thoroughly before making the cookies.
  • The rectangular dough should be wide enough to completely cover the vanilla log, even if it overlaps, that's perfectly fine.
