Ingredients
Tzatziki Chicken
- 2 chicken breast boneless
- ¼ cup tzatziki plus extra for dipping, store-bought
- 1 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
Greek Veggies
- 2 bell pepper chopped
- 1 medium zucchini chopped
- ½ medium red onion chopped
- 1 cup cherry tomato cut in half
- 1 tablespoon olive oil
- 1 tablespoon Italian seasoning
- ½ teaspoon salt sea salt
- ½ teaspoon black pepper sea salt
- ½ cup kalamata olives pitted
Instructions
- Preheat your oven to 425 degrees Fahrenheit. Place the chicken breasts in a bowl and toss with the tzatziki, olive oil, salt, and pepper.
- Chop the peppers, zucchini, red onion, and cherry tomatoes and add them to a 13x18" baking sheet. Toss them with olive oil, Italian seasoning, salt, and pepper.
- Nestle the chicken amongst the veggies and bake for 18-22 minutes, until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
- Remove the baking sheet from the oven and sprinkle the olives around the chicken. Serve the chicken with extra tzatziki on the side for dipping.
Notes
- Store-bought tzatziki works well for this recipe; Summer Fresh brand is recommended.
- For a different flavor, try substituting regular tzatziki with mint tzatziki as an alternative.
