Description
This tzatziki recipe starts by grating cucumber and pressing out excess water to avoid watery sauce, then mixing it with Greek yogurt, aromatic garlic, tangy red wine vinegar, minced fresh dill, and seasoning with salt and pepper. Refrigerating the sauce for at least 30 minutes allows the flavors to meld and develop a smooth, balanced taste.
The sauce has a cool, creamy texture complemented by the fresh herbal note from dill and a mild garlic bite. It works well as a side for grilled meats, vegetables, or as a refreshing dip.

Ingredients
- ½ English cucumber , grated on the large side of a box grater (about 1 cup)
- 1 cup Greek yogurt I use 2%, plain, 1 cup
- 1 medium clove garlic grated or minced (about ½ teaspoon
- 1 tablespoon red wine vinegar
- 1 tablespoon dill minced, fresh
- ¼ teaspoon kosher salt
- ⅛ teaspoon black pepper freshly ground
Instructions
- Gather the grated cucumber together and place in a paper towel, press the water out of the cucumber and place in a medium-sized bowl.
- Add the yogurt, garlic, red wine vinegar, fresh dill, salt, and freshly ground black pepper and mix well.
- Cover and refrigerate for 30 minutes or up to 3 days.
Notes
- Tzatziki can be made up to one day ahead and refrigerated to develop flavor.
- Pressing excess water from cucumber before mixing prevents a watery sauce.
