Ingredients

  • 2 scallions roughly chopped
  • 1 garlic roughly chopped, clove
  • 1 cucumber peeled, seeded & chopped (about 1 cup, medium
  • ½ cup yogurt plain, Greek
  • 3 tablespoons mint leaf fresh
  • 1 tablespoon olive oil extra virgin
  • 1 teaspoon lemon chopped, zest
  • 1 tablespoon lemon juice fresh
  • salt to taste
  • black pepper to taste

Instructions

  1. Add the scallions, garlic, cucumber, yogurt, mint, olive oil, lemon zest, lemon juice and a little salt and pepper to a food processor or blender and puree using the pulse button to start and puree button to make smooth.
  2. Taste and adjust seasoning with salt and pepper if needed.
  3. Transfer to a container until ready to use. You can make this earlier in the day and store into the refrigerator until ready to use.
