Uni Pasta Recipe (Creamy Homemade Pasta w/ Sea Urchin)

Uni Pasta Recipe features a creamy sauce enriched with sea urchin, combined with spaghetti or homemade taglioni pasta. The pasta is cooked and drained without rinsing, then tossed in a garlic-infused cream sauce where fresh uni is gently melted in. Some of the best-looking uni pieces are reserved for garnish. The result is a rich, silky pasta dish with the distinct, delicate ocean flavor of sea urchin complemented by garlic and cream. It’s suitable for those who appreciate seafood pasta made with fresh ingredients and a creamy texture.

Description

Uni Pasta Recipe (Creamy Homemade Pasta w/ Sea Urchin) centers on simple yet refined ingredients like fresh sea urchin, garlic, cream, and pasta to create a luscious cream sauce. Boiled spaghetti or taglioni is combined immediately with a pan sauce made by lightly browning garlic in oil, then simmering cream until slightly thickened before adding in uni. This technique gently incorporates the sea urchin into the sauce, preserving its delicate flavor and creating a smooth, rich texture. The uni imparts a subtle ocean taste that blends well with the creamy garlic sauce without overwhelming the palate.

The cooking method ensures the pasta retains its tenderness, while the sauce clings nicely to each strand, creating a luxurious bite. Reserving some of the finest uni pieces to top the plated pasta adds both visual appeal and concentrated flavor. This dish can be served immediately after mixing, making it a focused preparation that highlights the unique seafood ingredient and creamy texture without unnecessary additions.

The uni pasta is a special seafood dish best enjoyed fresh to appreciate the quality of the uni and the cream sauce. It offers a refined alternative to typical tomato or pesto pasta sauces, ideal for those interested in experimenting with unique ingredients like sea urchin in a creamy pasta context.

Ingredients

Servings
  • 1/2 /2 lb spaghetti OR, dried, or angel hair pasta
  • ~3 ~3 nests pasta taglioni (similar to spaghetti), laminated to thickness of 5. Approximately 1/4 to 1/3 of the recipe on that post, homemade
  • water if you only drink filtered water, you should only be cooking with it too!, filtered
  • salt for boiling pasta
  • 2 tbsp neutral cooking oil
  • 3 cloves garlic pressed or minced
  • 1/3 /3 cup heavy cream
  • 1 tray uni approximately 20 pieces
  • salt as needed, to taste

Instructions

  1. Boil water in a medium sized pot on high, add enough salt so it tastes like the sea
  2. Add the pasta to the water, let the water get back to a boil then drop the heat to about medium, so you maintain a low boil. Fresh pasta takes around 2-3 minutes, dried pasta will take longer. Just taste a noodle every 30 seconds or so and remove slightly before you think it's ready, since it will keep cooking from residual heat. Drain and do not rinse. Set the pasta aside and prepare to use it immediately.
  3. Put a medium to large pan on medium heat and let it warm up a bit. Add the oil and garlic, and lightly brown the garlic for a minute or so.
  4. Once you're ok with the garlic not browning any further, pour in the cream and let it simmer for a few minutes to warn and reduce a bit to thicken.
  5. Add all the uni you like, reserving about four of your best looking pieces to top the bowl at the end. I added about two large scoops of uni. You can adjust this based on how much pasta or cream you add too.
  6. Add the pasta into the pan, and let it warm up a bit. Toss to coat a few times. Taste and season with more salt if needed.
  7. Serve into two medium bowls, or one large bowl for sharing. Top with the remaining uni and serve.
