Valentine's Day Cupcakes Recipe

These Valentine's Day Cupcakes combine cocoa powders with basic baking ingredients to create rich chocolate cupcakes accented with cinnamon oil. The cupcakes are topped with a creamy cinnamon icing made from ground cinnamon hearts, butter, powdered sugar, and whipping cream for a distinctive spicy-sweet flavor.

Description

The cupcakes are made by blending all-purpose flour, sugars, baking agents, salt, unsweetened and black cocoa powders, milk, neutral oil, cinnamon oil, eggs, and hot water to produce a smooth batter. Baking at 350°F yields light and moist chocolate cupcakes with a hint of cinnamon integrated into the batter.

The frosting is unique, prepared by grinding cinnamon heart candies into powder and combining them with creamed butter, powdered sugar, whipping cream, and cinnamon oil. The frosting is beaten to a fluffy consistency and spread evenly on cooled cupcakes. Additional cinnamon hearts can be used as decoration for a festive appearance.

The black cocoa powder lends a darker color and deeper chocolate note; if unavailable, standard cocoa powder can be substituted though the cupcakes will be lighter in color.

Ingredients

Servings
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 3 tablespoons cocoa powder unsweetened
  • 3 tablespoons black cocoa powder see notes
  • ½ cup milk
  • ¼ cup neutral cooking oil generic cooking oil
  • ½ teaspoon cinnamon oil
  • 2 large egg
  • ¼ cup water hot

Cinnamon Icing

  • ½ cup cinnamon hearts plus a few extra for decorating
  • 1 cup butter at room temperature, salted
  • 3 cups powdered sugar
  • 2 tablespoons whipping cream
  • ½ teaspoon cinnamon oil

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Line a muffin tin with paper liners - or use a heart-shaped cupcake mold. In a large bowl, whisk the flour, sugar, baking powder, baking soda, salt, and both of the cocoa powders.
  2. Add the milk, oil, cinnamon oil, and eggs and beat using electric beaters. Add the hot water and beat just until combined.
  3. Divide the batter between the cupcake liners, filling each one ¾ of the way full. Bake the cupcakes for 18-20 minutes, or until a toothpick inserted in the middle comes out clean.

Cinnamon Icing

  1. Add the cinnamon hearts to your food processor and pulse until they become a power.
  2. Add the butter to a large bowl and use electric beaters to cream the butter for 2 minutes. Add the ground cinnamon hearts, powdered sugar, whipping cream, and cinnamon oil and beat on low speed for 30 seconds. Increase the speed to medium and continue to beat for 2 minutes more. Adjust the consistency to your liking by adding more cream or more powdered sugar.
  3. Transfer the icing to a pastry bag and pipe the icing onto the cupcakes. Top each one with a cinnamon heart - or a few cinnamon hearts, if you'd like!

Notes

  • Black cocoa powder provides a rich dark color; substitute with regular cocoa for lighter cupcakes without altering taste.
  • Do not exceed the specified amount of black cocoa powder to avoid overpowering flavors.
