  • 1 Tablespoon ground flax seeds plus 1 tablespoon cold water
  • 200 g vegan margarine (¾ cup + 1 tablespoon)
  • 100 g brown sugar ½ packed cup, soft
  • 150 g caster sugar ¾ cup, super fine sugar
  • 1 Teaspoon vanilla
  • 320 g self-raising flour (2 + ½ cups)
  • 150 g chocolate chips 1 cup, or chunks, vegan

Notes

  • This recipe makes 12 extra-large cookies. If you want smaller cookies, you can divide the dough up into more pieces and bake them for less time.
  • Store in an airtight container at room temperature or in the fridge for up to 5 days.
