Vegan Gingerbread Loaf
Description
The Vegan Gingerbread Loaf relies on a blend of ground ginger, cinnamon, allspice, and nutmeg to deliver classic gingerbread warmth throughout the crumb. The batter is made by mixing dry ingredients separately from wet, which includes applesauce, melted butter or vegan butter substitute, brown sugar, an egg replacement, vanilla extract, and almond milk. When combined, the batter is transferred to a lined loaf pan and baked until a toothpick comes out clean, ensuring even cooking and a moist interior.
The loaf offers a spiced, slightly sweet bread with a tender crumb, well suited for slices served at breakfast or as a snack. The optional glaze made from icing sugar and water brightens the loaf with a delicate sweetness and slight gloss, which can be applied to the whole loaf or individual servings depending on preference.
This loaf can be customized by adjusting the amount of spices to taste, increasing for a more pronounced gingerbread flavor. It is baked in a standard bread tin for easy slicing and presentation.
Ingredients
- 2 cups all-purpose flour
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tbsp. ground ginger
- 2 tsp ground cinnamon
- 1 tsp. allspice
- 1/2 tsp nutmeg spice
- 1 cup applesauce
- 1/3 cup butter then melted, or vegan butter
- 1 cup brown sugar
- 2 egg replacement
- 1 tsp vanilla
- 6 tbsp. almond milk
Glaze:
- 1/2 cup icing sugar
- 1-2 tsp water
Instructions
- Preheat oven to 350F and line a bread tin with parchment paper and lightly grease with cooking oil spray.
- Into a large bowl, combine the flours, baking soda, salt and spices.
- In a medium-sized bowl add the applesauce and whisk in the melted butter, brown sugar, egg replacement, vanilla and almond milk. Whisk just till combined.
- Add the flour mixture to the apple sauce mixture and stir with a wooden spoon to well combine.
- Transfer batter to the baking tin and bake for 50-55 minutes.
- While the loaf bakes, make the glaze by combining the icing sugar and water in a bowl. Stir till combined.
- Cool for 5 minutes in the bread tin and remove and cool completely on the wire rack. Serve with vegan butter or drizzle whole loaf or each piece individually with the glaze!
Notes
- Regular eggs can be used as replacements, baking time remains the same.
- Spice amounts can be adjusted to personal taste; increasing spices will enhance the gingerbread flavor.
