Description

The Vegan Pound Cake replaces traditional dairy and eggs with vegan butter and soy milk combined with apple cider vinegar to mimic buttermilk’s effect. Mixing the apple cider vinegar into the soy milk before combining with dry ingredients helps activate the baking powder for a lighter crumb.

  • ½ cup vegan butter or coconut oil
  • 1 cup brown sugar
  • 2 cups all-purpose flour
  • 3 tsp baking powder
  • 1 cup soy milk or other plant based milk
  • 1 tsp apple cider vinegar
  • powdered sugar optional, for topping

Instructions

  1. Pre heat the oven to 180 C / 350 F. Grease a 9 x 5 inch loaf pan.
  2. Mix the apple cider vinegar into the soy milk in a small bowl, and set aside.
  3. In a small bowl, whisk together the vegan butter and brown sugar.
  4. In a large mixing bowl, add the flour and baking powder. Mix together.
  5. Combine the dry ingredients with the butter mixture and soy milk mixture. Fold together until you get a smooth batter.
  6. Pour batter into loaf pan. Place into oven and bake for about 60 minutes. It’s ready when a toothpick inserted into the center of the cake comes out clean.
  7. Let pound cake cool down before removing from the loaf pan. Sprinkle powdered sugar over the cake before serving.
