Vegan Protein Waffles

If you are looking for a tasty and protein-packed breakfast to start your day, these protein waffles are easy to make and delicious. Made with banana and fresh raspberries, they are naturally sweet and contain a high amount of protein per serving as we add plant-based protein powder.

Ingredients

  • 1 ¼ cup flour
  • 2 teaspoon baking powder
  • 30 g Naked pea protein powder 2 scoops
  • ½ teaspoon cinnamon powder optional
  • a pinch of salt
  • ¼ cup fresh raspberries
  • 1 cup bananas or two medium-sized bananas
  • 1 ¼ cup soy milk
  • 1 tablespoon maple syrup optional

Instructions

  1. Turn on your waffle maker as it takes some time to heat.
  2. Mix all the dry ingredients in a big mixing bowl. Flour, baking powder, protein powder and salt. Optionally, add cinnamon. Set aside
  3. Add two medium-sized bananas in a medium-size bowl and using a fork mash them until you have a smooth mixture. Add the raspberries and mash them until they are fully incorporated with the banana.
  4. Using another mixing bowl, add all the wet ingredients. Plant-based milk, mashed bananas and raspberries, and maple syrup if you are using it.
  5. Pour the wet mixture into the dry mixture.
  6. Combine using a whisk all the ingredients until you have an homogeneous mixture. If the mixture is too thick, you can now add a little more milk.
  7. Grease the waffle maker with some vegetable oil or vegan butter.
  8. Add enough batter in the waffle maker and leave it covered while cooking. Do not open the lid if the waffle maker is steaming.
  9. When the steam starts reducing (it should take around 8-10 minutes), take the waffle out of your waffle maker, leave it to cool for 2-3 minutes, add your toppings and enjoy.
