Vegan Pupusas
Description
Vegan Pupusas combine a pliable corn masa dough with a flavorful filling of sautéed seitan, onions, corn, and refried beans. The preparation involves hydrating corn flour with warm water to create a dough that is less prone to cracking. The filling is first cooked by sautéing to meld the flavors, then placed inside the dough, which is shaped into a flat disc. Cooking in a nonstick pan or with minimal oil results in pupusas with a golden crust and tender interior. This method yields a satisfying savory snack or meal component suitable for vegan diets.
The gentle browning on the outside provides a slight crispness that contrasts with the tender, moist filling. The included garlic powder and salt enhance the savory depth. While optional, serving with salsa adds a bright, fresh component to the dish. Pupusas are traditionally made by hand, and keeping the hands damp during shaping helps manage the sticky dough. Cooking untouched promotes a crust formation without sticking, preserving the shape and texture.
This recipe suits cooks looking to create a vegan take on a traditional pupusa, substituting seitan as a protein source. They can be served as part of a larger meal or as a standalone snack.
Using warm water to hydrate the masa dough improves its workability and softness. Pinching off excess dough after sealing prevents heavy, doughy pupusas. Damping hands during shaping keeps dough from sticking, aiding in smooth formation. Allow the pupusas to cook undisturbed to develop a nice crust and prevent tearing when flipping.
Ingredients
- 1 package seitan optional
- ½ yellow onion diced
- ½ corn
- ½ refried beans
- 2 teaspoons garlic powder
- 1 ½ teaspoon salt
- 2 cups corn flour masa
- 1 ½ cups water warm or just enough for it to hold together
- salsa for serving (optional)
Instructions
- Heat seitan, then add onions and saute for about 5 minutes
- Mix in corn and beans, then set aside.
- In a large bowl, add the garlic powder and salt to the corn flour and then add enough water to have it all hold together.
- Take a small handful of masa and flatten it out big enough to make a little bowl with it in your hand, then add some filling, pinch up the sides up and pat flat.
- Use a nonstick pan or a bit of oil and cook on each side for about 4 minutes or until it gets golden brown.
Notes
- Use warm or hot water to better hydrate the corn flour, minimizing cracks in the dough.
- Keep your hands damp while shaping the masa dough to avoid sticking.
- Pinch off any excess dough after sealing the filling to prevent overly thick pupusas.
- Cook pupusas without moving them until they develop a golden crust to prevent sticking and tearing.
