Vegan Rice Pudding

This creamy vegan rice pudding is made with almond milk and flavored with orange, maple, and warm cinnamon spices.

Ingredients
- 3 cups almond milk
- 1 cup water
- 1 cup long grain white rice
- orange zest of 1
- ¼ cup maple syrup
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- ½ tsp salt
Instructions
- Place all the ingredients in a pot.
- Grate the orange. Whisk ingredients together well.
- Put the pot over the stove to boil, stirring occasionally to make sure the rice doesn't stick to the bottom.
- When it starts to thicken, stir continuously until rice is cooked. It will take 20-30 minutes.
- Serve warm with more cinnamon sprinkled on top.
Notes
- This recipe yields approximately 4 cups of rice pudding. One serving is ½ cup.
