Description

Walnut Cookies Aka Oreshki/Gorishki consist of a tender, slightly sticky dough made from flour, sugar, butter, margarine, eggs, mayonnaise, and baking powder. The presence of both butter and margarine gives the cookie shell a balanced texture and flavor. Dough pieces are pressed and cooked inside a traditional metal mold over medium heat on a stovetop to achieve a golden exterior. Each side cooks for 1½ to 3 minutes depending on mold thickness, producing a crisp yet delicate shell. After cooling, excess baked dough is removed and the hollow walnut shapes are filled with dulce de leche, a rich caramel filling. A second shell is added on top to form a complete walnut-shaped cookie filled with creamy sweetness. These cookies combine crunchy exterior and creamy caramel in a distinct shape, ideal for serving during holidays or celebrations.

  • 1/2 cup butter room temperature, unsalted
  • 1/2 cup margarine room temperature
  • 3 1/2 cup all-purpose flour
  • 1 cup sugar
  • 3 egg large
  • 1/4 cup mayonnaise
  • 2 tsp baking powder
  • 28 oz dulce de leche

Instructions

  1. In a bowl, mix together the flour and sugar.
  2. Add in butter and margarine. Use a handheld mixer to combine the ingredients until you have a smooth, even consistency.
  3. Make a little hole in the middle of the flour mixture. Then, add the eggs, mayo and baking powder into it.
  4. Use your handheld mixer to beat the ingredients together completely. Your dough should be soft and a little sticky.
  5. Place small pieces of dough inside each metal form of an oreshki mold. When using a stove top, cook until golden brown. Flip the pan over and cook the other side. FYI: Each side can take 1½ to 3 minutes depending on the thickness of your mold. Make sure to check the instructions on the box!
  6. Let the cookies cool. Then, break off the access dough that seeped out of the molds and cooked to the inside of the pan.
  7. Fill each mold with dulce de leche. Then, place another mold on top to make an walnut shape.
