Walnut Semifreddo with Walnut Cherry Brownies and Cherry Compote

Walnut and Cherry Brownie Base

• 100 gms walnuts
• 300 gms cherries pitted and halved
• 165 gms all-purpose flour
• 130 gms granulated sugar divided, + 2 tbsp and + 2 tbsp, total 2/3 cup
• 265 gms dark chocolate chopped, 9 oz
• 150 gms butter cut into pieces, unsalted, 2/3 cup
• 4 tbsp cocoa powder
• 4 egg
• 2 ½ tsp vanilla extract
• 1 pinch salt

Cherry Compote

• 400 gms Cherry pitted and halved, 14 oz
• 95 ml maraschino liqueur or Brandy or orange juice, 3 oz
• 40 gms granulated sugar 1/5 cup

Walnut and Cherry Bark

• 450 gms dark chocolate chopped, 1 lb
• 85 gms walnut toasted and cooled, 3/4 cup
• 1/3 cup candied cherries roughly chopped
• 50 gms salted caramel chocolate chopped, crunchy, 1 3/4 oz

Walnut Semifreddo

• 120 gms walnut 1 1/4 cups
• 150 gms granulated sugar
• 300 ml cream to be whipped with 2 tbsp icing sugar, 1 1/4 cups
• 5 egg yolk
• 125 ml water
