Watermelon Yogurt Smoothie
Description
This smoothie starts with a yogurt mixture folded with lime zest and vanilla extract to add fragrance and mild tartness. Separately, watermelon is blended with granulated sugar and lime juice for a sweet-tart fruit base, finished by pulsing in ice for chill and texture.
Assembling the drink involves alternating spoonfuls of watermelon mixture and yogurt into glasses to create distinct layers. Garnishing with watermelon wedges, lime slices, and mint sprigs adds freshness and visual appeal. The layers should be stirred together before drinking to combine flavors and textures.
The recipe allows preparing the yogurt layer ahead and storing it refrigerated for up to a day. The smoothie is best served immediately after assembly to maintain iced freshness and layering effect.
Ingredients
Yogurt Layer:
- 1 cup PLAIN yogurt 250 grams
- lime plus more for garnish, zest from 1
- 1/2 teaspoon vanilla extract
Watermelon:
- 3 cups watermelon 560 grams, diced, seedless
- 2 tablespoons granulated sugar
- lime juice from 1
- 2 cups ice 280 grams
- watermelon for garnish, wedges
- lime for garnish, slices
- mint for garnish, fresh, sprigs
Instructions
To make the yogurt:
- In a medium bowl, fold together the yogurt, lime, and vanilla extract. Set aside or cover and refrigerate for up to a day.
To assemble:
- In a blender, combine the watermelon, sugar, and lime juice.
- Blend until smooth, then taste and adjust lime juice and sugar as needed.
- Add the ice and pulse until blended.
- Pour about 1/4 cup (60 milliliters) of the watermelon mixture into each glass. Top with large spoonfuls of the yogurt, making sure some of it touches the edge of the glass. Alternate with more watermelon and yogurt to layer.
- Top with an additional small sprinkle of lime zest if desired. Garnish with watermelon wedges, lime slices, and/or mint sprigs.
- Serve immediately, stirring together the layers before drinking.
