Description

This Weetbix Slice brings together a wheat-based cereal base crushed and combined with brown sugar, self-rising flour, cocoa powder, and desiccated coconut. Melted butter binds the mixture which is then pressed into a slice tin and baked until set but tender. The cocoa powder adds a mild chocolate flavor, complemented by the coconut’s texture.

The icing is prepared by mixing icing sugar and cocoa powder with melted butter and boiling water to a soft spreading consistency, which is applied while the slice is still warm so it adheres smoothly. An optional sprinkling of desiccated coconut decorates the top, adding a final touch of flavor and texture.

Ingredients

  • 3 ½ weetbix (or 50 grams of another similar wheat-based cereal)
  • ½ cup brown sugar (115 grams)
  • 1 cup self-rising flour 150 grams) (or 1 cup plain /all purpose flour + 2 teaspoons baking powder
  • 1 cup desiccated coconut (90 grams)
  • 1 teaspoon cocoa powder
  • 125 grams butter melted

Icing

  • 2 cups icing sugar 280 grams, or mixture
  • 1 ½ tablespoons cocoa powder
  • 1 tablespoon butter 20 grams, melted
  • 2-3 tablespoons water boiling
  • 2 teaspoons desiccated coconut (optional, for decorating)

Instructions

  1. Pre-heat oven to moderate (180 degrees celsius / 350 degrees fahrenheit, fan-forced).
  2. Grease a slice tin (approx 26 x 16 cm) and line with baking paper, leaving excess on the sides to lift out slice once cooked.
  3. Crush weetbix well into a bowl.
  4. Add remaining dry ingredients to bowl and stir to combine.
  5. Add melted butter to dry ingredients. Mix well.
  6. Press mixture into slice tin with hands and even the top surface out using the back of a spoon.
  7. Cook for 20 minutes.
  8. Start preparing the icing a few minutes before the slice is ready to be removed from the oven. This slice is iced while hot from the oven.

Icing

  1. Place icing sugar/mixture and cocoa into a bowl.
  2. Add melted butter and 2 tablespoons of the boiling water to the icing sugar and stir to combine.
  3. If necessary, add enough of the remaining tablespoon of boiling water to ensure the icing is soft enough to spread.
  4. Spread the icing over the slice while still hot. Sprinkle with additional coconut if desired.
  5. Allow to cool completely before lifting the slice whole from the tin using the baking paper. Cut into 24 pieces with a sharp knife.

Notes

  • Store the slice in an airtight container in a cool, dry place for up to one week.
  • Freeze slices wrapped and in an airtight container for several months; fresh is preferred.
  • Break brown sugar lumps when mixing dry ingredients to ensure even texture.
  • Press the mixture firmly into the tin to avoid a crumbly slice.
  • Sift icing sugar if lumpy to achieve a smooth icing.
  • Do not disturb the tray while icing is setting to maintain a smooth surface.
  • Consider decorating with chocolate sprinkles or crushed nuts instead of coconut for variation.
