Yabluchnyk (Apple Cake)

Yabluchnyk is a layered apple cake featuring thinly sliced apples neatly arranged on a soft, buttery dough base topped with a cinnamon-spiced streusel crumble. The streusel is a crumbly mix of butter, brown sugar, flour, and cinnamon that bakes to a lightly crisp topping over tender baked apples. This cake combines a gentle sweetness and texture contrast between the soft apples, tender dough, and crumbly streusel, making it a pleasant dessert or teatime treat.

Description

Yabluchnyk (Apple Cake) starts with a soft dough made from flour, sugar, butter, cream, and an egg, combined to create a tender base. This dough is pressed into a baking pan before being topped with thin, evenly sliced apples arranged in overlapping rows to create an attractive layered effect. A streusel topping made by mixing brown sugar, cinnamon, flour, and butter is crumbled over the apples to add texture and sweet spice.

Baking at 190°C until the topping browns and apples soften results in a cake with a tender cake base, moist baked apples, and a crumbly, fragrant topping. The cake is gently sweet with warm cinnamon highlights bringing complexity to the overall flavor. The use of cream enriches the dough, contributing to its softness.

After cooling, this apple cake can be served plain or with accompaniments such as cream or custard. The layered apple slices provide a pleasing visual presentation that emphasizes the fruit.
