Yogurt Orange Cake With Olive Oil

The Yogurt Orange Cake With Olive Oil combines Greek-style yogurt and olive oil to yield a moist, tender crumb flavored with fresh orange juice and zest. It includes eggs, sugar, and self-raising flour to create a balanced, soft cake with a citrus aroma. Baking in a bundt pan gives it a distinctive shape, and a dusting of icing sugar adds a subtle sweetness to the surface. This cake is suitable for serving as a light dessert or teatime treat.

Description

This cake mixes Greek strained yogurt with olive oil, eggs, and sugar for a batter that is both moist and rich without heaviness. Orange juice and zest provide fresh citrus notes that permeate the cake, while vanilla extract adds background sweetness. The self-raising flour gives lift and softness to the texture.

The method involves whisking wet ingredients first and then folding in the flour, followed by a resting period before baking at 180°C. Baking in a greased bundt pan creates a cake with even cooking and a pleasing shape. A toothpick test confirms doneness, ensuring the center is fully cooked without drying out.

Once baked and cooled, the cake is inverted onto a plate and dusted with icing sugar. It pairs well with tea or coffee and is suitable for a light dessert.

Ingredients

Servings
  • 260 grams / 9.2 oz yogurt preferably Greek strained
  • 3 egg
  • 160 grams / 5.6 oz sugar
  • 180 grams / 6.3 oz olive oil
  • 320 grams/ 11.3 oz self-raising flour
  • 1 orange juiced
  • 2 orange zested
  • 1 teaspoon vanilla extract
  • icing sugar for adding on top

Instructions

  1. Add the yogurt, eggs, and sugar into a large mixing bowl. Stir vigorously with a hand whisk for 2 minutes until everything combines well.
  2. Pour in the olive oil and whisk to combine.
  3. Then incorporate the flour in batches. Add the orange zest, orange juice, and vanilla extract. Give it a good stir and then cover the bowl with a tea towel. Rest for 15 minutes while you preheat the oven at 180°C / 356°F.
  4. Grease a bundt cake pan with a bit of vegetable oil or cooking spray. Transfer the cake batter into the pan, spreading it evenly with a spoon. Bake for about 25-30 minutes. Or until when you prick the cake with a knife in the center, the knife comes out clean.
  5. Let the cake cool down a bit and then flip the pan over a serving plate. Sprinkle plenty of icing sugar on top and serve!
