For the Chicken

  • 1 large chicken breasts skinless, boneless
  • 5-6 small size potatoes sliced
  • 1 medium green bell pepper diced
  • 1 medium yellow bell pepper diced
  • 1 cup cherry tomatoes

For the Honey Mustard Marinade

  • 2 lemons or 4 tablespoons lemon juice
  • 1 tablespoon parsley chopped
  • ½ teaspoon garlic minced
  • 1 ½ tablespoons Dijon mustard
  • ½ teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons honey
  • 1 tablespoon olive oil

Instructions

  1. Slice the chicken breast in half lengthwise to ensure it cooks evenly.
  2. Slice the potatoes about ¼ inch thick. Cube the bell peppers into bite-sized pieces. Halve the cherry tomatoes.
  3. Cut the lemons in half and squeeze the juice into a small bowl, being careful to avoid seeds.
  4. Mix the lemon juice with the chopped parsley, minced garlic, Dijon mustard, salt, black pepper, honey, and olive oil until well combined.
  5. Place the chicken, sliced potatoes, bell peppers, and cherry tomatoes into a large mixing bowl.
  6. Pour the honey mustard marinade over the chicken and veggies. Toss well to ensure the marinade coats everything evenly.
  7. Place the marinated veggies (potatoes, bell peppers, and tomatoes) into the air fryer basket. Spread them out into a single layer for even cooking.
  8. Air fry for 10 minutes at 380 degrees F. This will soften the vegetables and start crisping up the potatoes.
  9. When the 10 minutes are up, open the air fryer and place the chicken breasts on top of the veggies.
  10. Pour the remaining marinade from the mixing bowl over the chicken.
  11. Continue to air fry for an additional 15-20 minutes. The exact cooking time will depend on the thickness of your chicken, but you're looking for an internal temperature of 165 degrees F. Check the chicken after 15 minutes; if it's not fully cooked, continue air frying for another 5 minutes.
  12. Serve the chicken and veggies immediately while hot, and garnish with extra fresh parsley if desired.
